- Tortellini – I like to use the refrigerated cheese tortellini, pictured above. I love the texture and flavor of the fresh pasta and cheeses, but frozen or even dried tortellini can be used as well. If using frozen or dried, you may need to cook them a little longer than the recipe suggests.
- Broccoli – I used fresh broccoli, cut into small florets, for this recipe. Frozen broccoli can be used instead, though. If using frozen broccoli, add it directly to the sheet pan with the partially cooked tortellini and lemon sauce.
- Sauce – The flavorful sauce is made using extra virgin olive oil, grated parmesan cheese, fresh lemon juice and zest, tamari (or soy sauce), freshly minced garlic, salt, and freshly cracked black pepper.

How To Make Roasted Lemon Parmesan Tortellini with Broccoli
- Heat oven to 425 degrees F and lay out a large sheet pan. Fill a large pot with water, place the lid on, and bring to a boil. Once water is boiling, add in the fresh tortellini, broccoli florets, and a big pinch of salt. Stir together, then wait for the water to return to a boil. Once boiling, cook for just about 30 seconds longer. You don’t want either to be overcooked.
- Drain the broccoli and tortellini, then let them sit for a few minutes until the steam has mostly evaporated. Make the sauce. To a medium-sized bowl, add all of the sauce ingredients and then whisk well until fully combined. Dump the tortellini and broccoli onto the large sheet pan and then pour over the lemon parmesan sauce. Use a spatula or your hands to toss everything together until the tortellini and broccoli are well coated.

- 1 (18 oz) bag fresh cheese tortellini
- 6-8 cups small broccoli florets
Lemon Parmesan Sauce
- 1/4 cup extra virgin olive oil
- 1/4 cup grated parmesan cheese (like you would put on pizza)
- 3-4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon fresh lemon zest
- 2 teaspoons tamari, or soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
Instructions

- Place in the pre-heated oven and bake until tortellini and broccoli are beginning to brown, 15-20 minutes, flipping halfway through. Remove from the oven and top with extra parmesan cheese and fresh lemon juice, if desired. Season with salt and black pepper, to taste.
Notes
You may want to use 1/3 cup olive oil instead of 1/4 cup if you are adding beans or extra vegetables.
